<p>But true fire protection begins not with the fire department, but with a quality fire suppression system that meets local, state and federal fire codes. Keeping abreast of those codes- or hiring a <a href="http://www.nationwidefireprotection.com/">Riverside fire protection</a> equipment company that does- is important to avoid relying on an outdated system in the unfortunate event of a fire.</p>

<p>One way is if the system itself no longer complies with current code. Dry systems- also known as powder chemical systems- are to be replaced with wet systems, as they are not complaint. Dry systems were much more mechanically complex and had more problems setting off, Farazandeh said. They also were difficult to inspect.</p>
<p>The other way a system can be outdated is if it misses its annual inspection. Every type of <a href="http://www.aps-hoods.com/services/index.php">fire system</a> must be tested and inspected annually. Fusible links, which are a component of the system, also need to be changed periodically. If not, the system will be deemed outdated and noncompliant to fire safety code.</p>
<p>It is a good idea for restaurant owners to assume that fire prevention will not ever be 100 percent successful, Farazandeh said.</p>
<p>Restaurant fires typically occur in the kitchen.  According to the National Fire Protection Association, fire departments throughout the United States responded to an estimated average of 8,520 fires in drinking establishments and restaurants between <a href="http://www.nfpa.org/assets/files//PDF/Eatingfactsheet.pdf">2000 and 2004</a>.</p>
<p>Cooking materials such as food and confined cooking fires accounted for about half of those fires. For example, deep-fat fryers may use flammable cooking oil in their processes, which can result in grease build-up in hoods and ducts if they aren’t properly cleaned on a regular basis. If this grease build-up ignites during a fire, it can contribute to the spread of a fire, Farazandeh said. When restaurants have an automatic fire suppression system in place, the average loss per fire is reduced by more than 40 percent, according to the <a href="http://www.rcmd.com/cs/risk_management/fire_protection_restaurants">NFPA</a>.</p>
<p>“Unfortunately, fires are bound to occur,” Farazandeh said. “But the size of the fire and the damage caused can be kept to a minimum, provided a proper fire suppression system is in place that has been tested to ensure it will work properly when you need it to.”</p>

			<content:encoded><![CDATA[<p>PLACENTIA, CALIFORNIA— Years ago when restaurants began upgrading to new, high-efficiency burners that resulted in higher heating rates of cooking oils, it became apparent that new standards for fire systems were warranted.</p>
<p>Underwriters Laboratories created those stricter standards in November 1994. Unfortunately, many restaurants today still have not upgraded their systems.</p>
<p>“These requirements were a welcome addition to fire systems companies such as mine because it increased safety in commercial kitchens,” said Massoud Farazandeh general manager of Nationwide Fire Protection Corp., which provides <a href="http://www.nationwidefireprotection.com/">Bakersfield, CA fire systems</a> service for restaurants, as well as <a href="http://www.nationwidefireprotection.com/blog/">fire protection</a> services throughout California. <span id="more-139"></span></p>
<p>New fryers are so well-insulated these days, that it slows the cooling rate of cooking oils below their auto-ignition point. It was discovered that the kitchen fire systems prior to UL 300 systems weren’t effective at putting out fires caused by these fryers, Farazandeh said. What was worse was that traditional dry chemical systems performed much worse than the newer liquid suppression systems.<br />
UL addressed this deficiency by creating UL 300, which created a new standard for testing that mandates tougher and more realistic fire tests for ranges, fryers, griddles, newly added woks and certain types of broilers.</p>
<p>Companies that made kitchen <a href="http://www.prlog.org/10345085-san-francisco-fire-protection-systems-company-releases-tips-in-honor-of-upcoming-national-fire-pr.html">fire suppression</a> systems subsequently redesigned and re-tested  their systems to ensure they complied with UL 300.<br />
Under the new testing standards, no dry chemical systems have been able to pass the test, Farazandeh said. Only wet chemical systems with greater flow rates, more flow points and more agent capacity have met UL 300 tests to date.</p>
<p>Besides the fact that it’s the law, there are several other reasons restaurants should upgrade their systems, Farazandeh said.</p>
<p>UL 300 systems discharge only onto protected equipment, which means there is no “fallout” throughout the restaurant, according to an article by Pat Jaugstetter, president of the <a href="http://www.nafed.org/login/publications/5%20Simple%20Reasons.pdf" target="_blank">Fire Equipment Manufacturers Associaion</a>. This results in cost savings for cleanup in the event the system is used.</p>
<p>Manufacturers no longer make dry chemical systems for restaurants, which means replacement parts are unavailable, Jaugstetter’s article stated.</p>
<p>An increasing number of fire equipment distributors will not service dry systems in restaurants because they fear they could be held liable if the old, outdated systems failed. Since manufacturers no longer make the systems, they also no longer support them.</p>
<p>Restaurant business depends on keeping the doors open and when the kitchen isn’t operational, that results in lost revenue, the article stated.</p>
<p>“Most restaurants don’t have the luxury of being able to shut down for days or weeks for cleanup and repair in the event of a fire,” Farazandeh said. “That’s all the more reason to upgrade these systems. Some people feel as though they can’t afford to do it, so they put it off. But they can’t afford to put this off, either.”</p>

<p>Although the company has sold ventless kitchen hoods for some time, a recent incident brought the option to the forefront, said Massoud Farazandeh, general manager of Nationwide Fire Protection Corp. NFP has installed <a href="http://www.nationwidefireprotection.com/">Sacramento fire protection equipment</a>, as well as commercial kitchen hoods, for more than 20 years.</p>
<p>“It’s important for current and prospective customers to know that the ventless hood option is available to them when they call for information about <a href="http://www.aps-hoods.com/">hood sales</a> and installation services, Farazandeh said.<span id="more-132"></span></p>
<p>A ventless hood is a kitchen exhaust hood that can be installed in restaurants and other commercial kitchens that do not use gas, he said. Whereas a traditional hood system uses a vent to remove fumes, steam and smoke from the kitchen, a ventless hood recirculates the air once it is filtered through one or multiple filters. The filters work to eliminate odors and remove impurities from the air.</p>
<p>Ventless hoods function at practically the same effectiveness level as vented hoods. However, they need to be cleaned more often to make sure they continue to operate optimally. Farazandeh doesn’t see that as being a negative to businesses that have no other option.</p>
<p>“For commercial operations that have the choice between implementing something that requires more cleaning or shutting down their entire operation, it’s not a difficult choice to make,” said <a href="http://www.nationwidefireprotection.com/services/index.php">Sacramento fire protection systems</a> company manager.</p>
<p>That was the case with a recent customer located in the Los Angeles area. A large company that occupies about five floors of a skyscraper had a dining area where food was made each day for its employees. They were told by the fire department that they could not prepare meals unless they were able to install a vented hood system.</p>
<p>That posed a problem, because there was no way to install a vented system in the building, Farazandeh said. “We couldn’t run a duct through to the roof, nor could we run one out the side of the building,” he said.</p>
<p>The saving grace was that the dining area’s kitchen appliances were electric, not gas. That made it possible to go with the ventless hood. Farazandeh said he is sure other businesses in similar situations could consider ventless hoods.</p>

<li>Keep fusible link line conduits free of grease. Grease in the conduits has been known to prevent the system from properly setting off in the event of a fire.</li>
<li> Ensure proper cable connections. Sometimes, the cable doesn’t travel properly to set off the system. The cable is connected to the fusible link line and sets off the mechanical head system. This discharges fire suppression chemicals to put out a fire if it breaks out.</li>
<li> Make sure electrical interlocking is in place. If it isn’t, this can keep a fire suppression system from working properly. In the event of a fire, the electrical interlocking starts up the exhaust fan, turns off the Makeup Air Unit and turns off electrical appliances, lights and outlets in and under the hood. In some cases, the electrical interlocking also discontinues gas flow.</li>
<li> Check nozzle caps to make sure they are in place. Farazandeh often conducts inspections and finds that nozzle caps are missing and the nozzles have filled with grease. If the system is set off and the nozzles are clogged, the fire suppression chemical can’t be discharged properly.</li>
</ul>
<p>“A fire suppression system is something that you hope you never have to use,” Farazandeh said. “But if you do, you want to know that it will work properly, and the only way to do that is to have it checked routinely to ensure it is at an optimum functioning level.”</p>
